Coconut Sticky Rice and Mango

 This dessert was definitely not my mother's recipe. It's absolutely authentic, but with a few modern twists. It came from the sweetest instructor at a Thai cooking class i took with my dad. It's easy to make, refreshing, and I've even eaten the leftovers as a sweet breakfast. Plus it's a little less sweet than most American desserts, so it's perfect to satisfy that sweet tooth without breaking the diet.
